- 1 onion (large, diced in 1/4 inch pieces)
- 2 cloves garlic (minced, I used 1 tsp. minced garlic)
- 1 tsp. curry powder (sweet)
- 1 tsp. hot curry powder (or less, depending on how spicy you like it. You can also use your favorite curry powder blend instead of the sweet and hot curry powder.)
- 1 cup brown lentils (dried, rinsed)
- 2 cups homemade chicken stock (or 1 can chicken broth and 1/4 cup water, or use vegetable stock for vegetarian version)
- 3/4 cup chopped parsley (or less)
- salt (/pepper to taste)

Very good recipe. I added shredded rotisserie chicken & spinach. Definitely worth a try.

I had already cooked the lentils so switched it up a bit. Instead of the stock i used shredded chicken & added creole seasoning and kale. Served in a cheesy flour tortilla.

Very good. I doubled the recipe to feed my small army. I added a half pound of ground beef. I'm sure it would have been even better if I had fresh parsley, but I had to substitute with dried.
