- 1 inch ginger (piece, sliced)
- 4 cloves garlic (lightly crushed)
- 3 stalks lemongrass (cut into 4 inch lengths and lightly bruised)
- 1/4 cup tomato paste
- 3 cups beef stock
- 3 whole star anise
- 1/2 tsp. fennel seeds
- 3 whole cloves
- 1 bay leaf
- 1 stick cinnamon
- 2 carrots (peeled and cut into 2 inch pieces)
- 4 small potatoes (peeled and halved or quartered)
- 1 Tbsp. sugar (or to taste)
- 2 Tbsp. fish sauce (or to taste)
