- 1 lb. italian sausage
- 1 Tbsp. olive oil
- 2 cups zucchini (cubed)
- 1/2 red bell pepper (diced)
- 8 oz. rotini
- 1 cup ricotta cheese (part skim)
- 2 Tbsp. dried herbs (basil, sage, parsely)
- Parmesan cheese (freshly grated)

Directions
- Cut sausage diagonally into 1-inch pieces and cook sausage in a large skillet over medium heat, turning to cook and brown evenly, about 10 to 15 minutes or until internal temperature reaches 160 degrees F. Set aside.
- Heat olive oil in a large skillet and add zucchini and red pepper. Cook over medium heat until tender but still crisp, about 3-4 minutes.
- Cook the rotini according to the directions on the package. Drain and reserve 1 cup cooking water. Add pasta to skillet and stir in ricotta. Add 1/2 cup pasta water and stir until creamy. Stir in sausage. Add more water if mixture is too dry.
- Sprinkle with herbs and Parmesan cheese.

It was very bland to me. I liked everything but the ricotta cheese. Next time I’ll figure out a different sauce then it’ll be perfect.

It was okay, the spiciness of the Italian sausage kind of overkilled to me, and definitely add more water than suggested to the ricotta cheese and pasta at that step, but other than that the zucchini and pepper went SUPER well together especially with the pasta.

It’s pretty good. I would add some more spice to it. I added paprika, a pinch of southwest seasoning, cumin. I think if you don’t add more seasoning, it would be on the bland side

It was pretty good. You have to spice it up a bit- I added several seasonings(such as paprika and Cajun spice to the sausage), thyme, basil, red pepper flakes and oregano (fresh-while cooking; in addition to dried on top) fresh garlic, cooked EVERYTHING in lots of olive oil, and tossed in lemon juice at the end. Also broccoli is a nice addition and some shredded Parmesan to garnish. Do NOT add the 1/2 c of water, it’s not necessary! Just add your ricotta, whether or not you use lemon juice (or white vinegar would also be a good acidic substitute) at the end!
Also I once subbed summer squash for zucchini, both are good.

Really good. Didn't need the 1/2 cup of water, it was creamy enough when mixed with the pasta.

We all loved it, even tge kids! I would recommend cooking the sausage first and then cutting it up though.

Delicious! I sautés lots of minced garlic before adding the red pepper and zucchini. I also added mushrooms, an Italian seasoning blend and minced onion. Served this with garlic bread. The whole family loved it

This turned out to be a hit! My husband loved it and just kept saying how good it was and my children wanted to take some leftovers home with them. I did add a bit of garlic powder to it just to spruce up the flavor.
I also made the zucchini fritters that you can find on Yummly to go with this recipe. Those were amazingly good as well and gave a nice change of texture with this pasta dish.
