- 3 bell peppers (small, cored and diced , I used a mix of colors)
- 2 celery (ribs, chopped)
- 1 white onion (small, peeled and diced)
- 1 jalapeño pepper (*, seeded and finely chopped)
- 4 cloves garlic (minced)
- 6 cups chicken stock
- 1/4 cup flour
- 28 oz. crushed tomatoes
- 1 cup brown rice (or uncooked white)
- 2 Tbsp. Cajun seasoning (** , add more/less to taste)
- 2 bay leaves
- 1 tsp. dried thyme (crushed)
- 1 lb. shrimp (peeled and deveined)

I made this soup a couple of weeks ago and thought it was fantastic. The guys at my club did too, as I took second place with it in a soup cook-off there.

I love this recipe! It takes in to account every flavor and helps to bring it to life: I do add additional veggies, including okra - just to give it a little more heft. But it is a really great dish and one of my favorites.

Whole family loved it. Only used 4 cups of stock so it was a little less soupy and more like a stew.

Amazing. I substituted the jalapeño for cayenne pepper, and the result was absolutely delicious!!
