- 1 lb. boneless chicken thighs (or chicken breast, diced into 1/2-inch pieces)
- 1 1/4 tsp. sea salt
- 1/2 tsp. black pepper
- 2 tsp. cumin powder
- 2 tsp. chili powder
- 1 tsp. garlic powder
- 1 tsp. onion powder
- 1/4 tsp. cayenne pepper powder
- 1/2 tsp. paprika (smoky)
- 1/4 cup olive oil
- 1 cup onion (chopped)
- 2 Tbsp. garlic (finely minced)
- 1/2 green pepper (a medium, chopped)
- 1 cup cherry tomatoes (chopped)
- 1/4 cup chopped fresh cilantro
- 1 Tbsp. lime juice

I love when sombebody gives me options on how to prepare cauliflower in other ways than just deep fried or in a cheesy sauce :) perfect combination with the slightly mexican taste :)

I don’t like meat or poultry very often, but this recipe provided for tender and flavorful chicken and I loved it.

I made this with crushed red pepper and chicken thighs cut into thin slices with diced tomatoes, green peppers and sweet onions with seasoned salt, black pepper, basil and oregano and it was tasty.

Not quite. Mexican rice should be cooked with salsa/tomato sauce and this just wasn’t it. Made this again using the ingredients from a typical Mexican Rice recipe but using cauliflower and it was better than whatever this was. If you know how to sequence your cooking, it shouldn’t be soupy.
I used regular tomatoes as well.

I love this recipe. I saw someone gave a bad review for it being “soupy”. I’m not sure where SHE went wrong. There’s literally no broth:) Easy, delicious, and stuff that’s on hand .

After reading the reviews I decided to do a bit of a different take. Substituted steak for chicken and cucumbers for peppers. Utilized the seasoning as a dry rub and added some to the veggies also. Took out the cauliflower all together because it made so much. Added more lime juice than recommended. It tuned out SUPER flavorful and delicious!!!

I used rice instead of the rice cauliflower. It was good but not great I don’t think I would make it again and it is very labor-intensive. I put cheese on the top to give it a little bit more flavor which kind of save the day.

Too much blog, and the directions were hidden and not specific enough And when I did find some semblance of a list of directions, I didn’t see any cook times. Not specific enough for a beginner. If there was a specific page dedicated to explicit directions, then it was not obvious enough to find. But I cooked it anyways and I loved it.

Delicious! Really enjoyed the flavor. Great spice combination I did add a little chicken broth with the spices when cooking the chicken.

Enjoyed the finished result with my husband. Only given 4 stars because I found the instructions for actually cooking the cauliflower rice confusing.
Perhaps it’s just me being ignorant but I found step 3-5 leaving me unsure of when the cauliflower rice was to be cooked.
