Description
Bursting with fresh blueberries and zippy lemon flavor, this baked French toast casserole is perfect for spring and summertime brunches. The recipe is a Yummly original created by Sara Mellas.

- 1 lb. day-old challah
- 8 large eggs
- 1/2 cup sugar
- 1 3/4 cups whole milk (plus 2 Tbsp.)
- 1 tsp. vanilla extract
- 2 lemons (zested)
- 1/8 tsp. salt
- 1 cup fresh blueberries
- powdered sugar (for dusting)

Directions
- Preheat the oven to 350°F.
- Spray a 9x13-inch baking dish liberally with nonstick cooking spray.
- Cut bread into 1-inch cubes and transfer to a large mixing bowl. Set aside.

Wonderful!!!! I took another commenter’s advice and cut the eggs to 4 and it turned out great!!! I also made an easy lemon icing and the kids used that or syrup on top. Topped with cinnamon and powdered sugar after baking. I wish I would have thought to add cinnamon to the mixture but I totally spaced.
Family of 4 and we almost finished the whole thing! Absolutely delicious!!!! 🙌🏽

So quick & easy to put together. I added poppyseeds, a teaspoon of cinnamon & a half cup of vanilla Greek yogurt to the milk mixture. I used nonfat milk & 1/3 cup of Stevia to keep it lighter in calories. I covered it with foil & baked it for about 55-60 minutes, removing the foil for the last 20 minutes. This step kept the top from drying out before the rest of the French toast was baked through. This is a very adoptable recipe: orange zest & cranberries could be used for a fall/winter version. I look forward to trying it!

Not a big fan of French toast casserole but I like blueberries and lemon this was real good . I only made half batch there is only two of us it was so easy .it not real sweet which I liked .I would make again

Turned out absolutely perfect. I used a sleeve of english muffins for the bread. Was so fresh and light. The blueberries really go well with the lemon. No leftovers!!!

Made it with frozen Saskatoon Berries. Only had 1 lemon on hand, so used an orange too. Took their juice and added crab apple juice, corn starch, vanilla & icing sugar to create a warm pudding for a 'syrup'. Found the flavours were more enhanced the longer the 'syrup' soaked into the French Toast on the plate!
