- 100 grams speck (finely chopped)
- 2 garlic cloves (thinly sliced)
- 2 Tbsp. thyme leaves

- 2 cups cream (pure, thin)
- 200 grams creme fraiche
- 5 1/2 tsp. fennel seeds (toasted, crushed, plus extra seeds to serve)
