- 1 cup red lentils
- 2 cups water
- 1 Tbsp. olive oil
- 1 onion (finely chopped)
- 1 cup chopped celery (finely)
- 1 Tbsp. minced garlic (or less, but I like a lot of garlic)
- 1/4 tsp. ground turmeric
- 1 tsp. ground cumin
- 1 tsp. chile powder
- 1 can roasted tomatoes (I like petite dice tomatoes for soup)
- 2 cups vegetable broth
- 1 tsp. green Tabasco sauce (or other hot sauce of your choice. Green Tabasco is fairly mild, so you may want less if you use a stronger hot sauce.)
- salt
- ground black pepper
- 1/4 cup lime juice (fresh squeezed, 2-3 limes, or less if you're not that into lime)
- 1 cup chopped fresh cilantro

Would make this again. I added some grilled chorizo that was sliced. Put in a bit too much of this and it came out a little too fatty. I think 2 links would have been enough.

Very good. Expected more of a kick in terms of heat, but can probably add more chili powder or chipotle powder. Either way, enjoyable

Really nice as a soup or a stew. I used 2 cans of rotel tomatoes, a bit more hot sauce and topped it with avocado. I'll definitely be making again.

Delicious! The only thing I did different was use sriracha sauce as my hot sauce. Will definitely fix again.

Delicious! I added boneless chicken breasts to cook with the stew, then shredded at the end right before adding the lime and cilantro. I also did not soak the lentils first, just cooked them with the stew. I added avocado when serving, which went well with the lime and cilantro. This was easy to make and delicious! My husband loved it also. We both went back for more!

I wasn’t feeling well today so the hubby cooked this up! It was great! He did go a little off recipe by adding some salsa verde which made the consistency a bit runnier but the flavor was still great!

I really liked this dish. I’m not usually a fan of lime, but this dish is well a balance of flavors. I also like the heat of the recipe without a big heavy feeling of a meat stew. Will definitely make again!

Love this soup - reminds me of chicken tortilla w/out the chicken of course Kids love too! I’ve made this at least a dozen times. It’s in the rotation 😀

Easy and delicious! I added red peppers, cholula hot sauce and a beer to the broth and turned out great with a small kick. Definitely saving this recipe for more fall and winter dinners.

i made a double batch....needed more than double the spices and a lot more simmer time to reduce liquid but it was perfect in the end. will make again.

I liked it. I cooked the lentils a wee bit to long, so they were slightly mushy. It was very tasty though.

Way way way to much lime for this dish it needed something to handle that much lime maybe some blackbeans. Disappointed will not make again.

I have made this recipe several times and i love it! Great combo of flavours. I use chicken stock instead of vegetable stock. Sometimes I add pearl barley as well.

This recipe is pretty good. It's simple and quick. I used split red lentils and didn't cook them before adding them to the broth because I didn't want them to turn to mush. I also added 2 chopped serrano peppers along with the tomatoes. I didn't use canned tomatoes, but fresh. After adding the lentils I cooked the stew for about 15 minutes. The serranos definitely added a lot of heat, which I enjoy, and I also added shredded chicken to each serving. Decent recipe and I would make again if I needed something quick and easy with few ingredients.
