- 2 cups brown chicken stock (brown stock or canned beef bouillon)
- 1/2 Tbsp. tomato paste
- 2 cloves garlic (mashed)
- 1/4 tsp. thyme leaves
- 1 bay leaf
- 24 onions (Brown-Braised, recipe follows)
- 1/2 lb. mushrooms (Sautéed, recipe follows)
- 3 Tbsp. all-purpose flour
- 2 Tbsp. softened butter
- fresh parsley leaves
- 1 1/2 Tbsp. butter
- 1 1/2 Tbsp. oil
- 24 white onions (peeled, about 1-inch in diameter)
- 1/2 cup stock (brown, canned beef bouillon, dry white wine, red wine, or water)
- salt
- pepper
- 1/4 tsp. thyme
- 1/2 bay leaf
- 4 parsley sprigs
- 2 Tbsp. butter
- 1 Tbsp. oil
- 1/2 lb. fresh mushrooms (washed, well dried, left whole if small, sliced or quartered if large)
- 2 Tbsp. shallots (minced, or green onions, optional)
