- 1 oz. salt pork (diced)
- 1.5 oz. bacon (diced fine)
- 2 Tbsp. butter
- 1/4 cup celery (minced)
- 1 cup onion (chopped)
- 1 garlic clove (small, minced)
- 2 Tbsp. flour
- 3 cups stock (from the clams)
- 1 1/4 lb. all purpose potatoes (peeled and ½” diced)
- 1 tsp. fresh thyme (or ½ teaspoon dried)
- 1 bay leaf
- black pepper
- 2 cups heavy cream
- butter (for serving)
