Preheat the oven to 400°F.

Set a wire roasting rack in a baking sheet. Wrap a strip of bacon around the length of each frank and arrange them with the ends of the bacon strips down on the roasting rack.

Bake the franks on middle rack of oven until bacon is fully cooked and crisp at the edges, 23-28 minutes. Meanwhile, prepare toppings.

Juice the lime into a small bowl. Add the mayonnaise, sour cream, hot sauce, and garlic powder and whisk until blended. Cover and refrigerate until ready to serve.

Dice the tomato. Finely dice the onion. De-seed the jalapeno, if using, and cut it crosswise into thin strips. Mince the cilantro, if using.

When franks are done, remove baking sheet from oven. Set each frank in a bun and set them back on the rack. Rinse and drain the pinto beans, then spoon 2 tablespoons onto each frank.

Bake the franks on middle rack of oven until beans are warm, 2-3 minutes.

Check to see that franks are done. Remove from oven or add time as needed.

Transfer franks to a serving platter. Top with tomato, onion, jalapeno, and cilantro. Drizzle with lime mayonnaise, and serve.
