Description

- 1/2 red onion
- 1/2 green bell pepper
- 1/2 red bell pepper
- 2 Tbsp. extra-virgin olive oil
- 1/2 tsp. garlic powder
- 1/2 tsp. paprika
- 1 dash cayenne
- 1 tsp. salt
- black pepper (to taste)
- ketchup (for serving)

Directions
- Preheat the oven to 425°F.
- Line a large baking sheet with parchment paper.
- Dice the potatoes into 1/2-3/4-inch pieces. Finely dice the red onion and bell peppers.

I made this dish, instead of French fries, as a side for air-fried chicken nuggets. I added a touch more salt (pink Himalayan) and paprika. The paprika added a little spice, while the onions and bell peppers carried the foremost flavor. I only used a small amount of garlic salt because of how overpowering garlic can be, but it was a very good addition to the dish. Everyone enjoyed it.

Simple and easy way to jüsh up taters. Didn’t have Yukon and subbed with russets. Will make again!

Not nearly enough seasoning in my opinion. I ended up adding a lot more salt plus some lemon pepper.
