- 1 Tbsp. coriander seeds
- 1 onion
- 2 shallots
- 1 kg beef bones (knuckle, oxtail)
- 300 grams meat (beef, without bones)
- 1 Tbsp. brown sugar
- 1 Tbsp. salt
- 1 lime
- rice noodles (flat)
- 1 red chili pepper
- 1 bunch spring onions
- fresh mint leaves (you can also use fresh Thai Basil leaves)
- 1 bunch coriander leaves (fresh)
- bean sprouts (I used a mixture of more types and not only the “mung” bean)
- hoisin sauce (optional)
- Sriracha sauce (optional)
