WOW! Delish. I had mangoes, pears and nectarines so I used all of them. Next time would leave out the nectrines, they didn't fare too well in the cooking and I would do it in smaller batches to try to retain some crunchiness. I added walnuts when cooking the cheese, but they needed a bit longer. The halloumi I bought was too salty, so watch that next time too.
