  • 2 1/4 cups all-purpose flour
  • 1 tsp. baking soda
  • 1/2 tsp. fine sea salt
  • 1/4 cup cocoa powder (I used Dutched, sifted)
  • 1/2 cup hot chocolate mix (I used 2 different kinds, one with Dutched cocoa and one based on natural cocoa, see notes above, sifted)
  • 1 cup unsalted butter (2 sticks, 226 g, room temperature)
  • 8 oz. cream cheese (package, room temperature)
  • 2 cups sugar
  • 3 oz. chocolate (dark peppermint, with minimum 60% cacao, chopped and melted, see notes above on subbing plain chocolate)
  • 5 eggs
  • 1 tsp. vanilla
  • 1 1/2 tsp. peppermint extract
  • 1/8 tsp. peppermint oil (optional)
  • marshmallows (glaze for frosting (see below))
  • sprinkles (of choice for decorating, optiona)
  • 1 Tbsp. corn starch
  • 3 Tbsp. confectioners sugar
  • 2 envelopes gelatin (I always use Knox)
  • 1/3 cup cold water (plus 3 T cold water)
  • 1 1/3 cups granulated sugar (plus 2 T granulated sugar)
  • 1 cup light corn syrup (plus 3 T light corn syrup)
  • 1 pinch salt
  • 9 Tbsp. cold water (separate from water above)
  • 1 tsp. vanilla extract
  • 2 tsp. peppermint extract
  • 3 drops peppermint oil (several drops)
  • 1 Tbsp. heavy cream
