- 1 Tbsp. butter
- 2 1/2 lb. bone (skin-on, in chicken pieces, all thighs or a whole cut up chicken or a mixture of light & dark meat)

- 1 cup chopped celery
- 2 cups carrots (diced)
- 3 garlic cloves (minced)
- 1 1/2 Tbsp. fresh thyme leaves (or 1 1/2 teaspoons dried thyme)
- 3 bay leaves
- 1/2 tsp. garlic powder
- 1/2 tsp. onion powder
- 10 cups low sodium chicken broth
- 1 tsp. sherry
- 2 1/4 cups flour (all-purpose, DIVIDED)
- 1/2 cup cornmeal
- 1 Tbsp. baking powder
- 1/2 tsp. baking soda
- 6 Tbsp. unsalted butter (melted)
- 3/4 cup buttermilk (at room temperature)
- 2 Tbsp. fresh parsley (minced, plus more for garnish)

The soup part was fantastic. I added onion and peas like another reviewer. The dumplings, however, didn’t work out for me. The dough was too dry, and the dumplings ended up like dense little rocks.

This was delicious! I had not made chicken and dumplings for years and usually made my dumplings using a biscuit mix. I have to say, I was somewhat skeptical about using cornmeal in the dumplings but I had some on hand that was very fine and they turned out great! They were not at all gritty or have a cornmeal taste as described in another review. I did add some chopped onions but otherwise followed the recipe as written. I will definitely be making this again!

Delicious as always! This is the only receipt that I use for chicken & dumplings. However, I do cheat when it comes to the dumplings. For those, I just get a canister of Grands Butter Tastin’ Homestyle biscuits & cut each biscuit into quarters and then just drop them on in. It gives it some additional flavor & it speeds up the cooking time too!

The flavor is there but I misunderstood the instructions and put the dumplings in too cold. With some practice this will be a great dish!

This was such a great family dish! I have to admit i used canned biscuits for the dumplings... I am sure the homemade dumplings are much better. Thanks for the great recipe!

!The soup part is good but the dumplings are not. I did not like the corn meal at all. I prefer traditional dumplings. The cornmeal made them taste like cornbread with bread like texture instead of dumpling texture. Ick.
