- 1 yellow onion (large, unpeeled)
- 1 piece fresh ginger (unpeeled)
- 7 lb. chicken bones (such as back, wings, or whole carcass)
- 1 1/2 Tbsp. kosher salt
- 2 Tbsp. light brown sugar
- 4 sliced shallots (large thinly, about 2 cups)
- 3 cups canola oil
- 3 lb. chicken
- 6 whole scallions
- 1 ginger (thumb-sized piece of, crushed, I use a garlic press)
- 1 Tbsp. kosher salt
- 3 qt. chicken stock
- 1 Tbsp. fish sauce
- 16 oz. rice vermicelli (dried, cooked according to package directions)
- 1 bunch scallions (trimmed and thinly sliced, about 1 cup)
- 1 bunch cilantro (chopped, about 1 1/2 cups)
- fried shallots (Crispy, for garnish, optional)
- basil (Thai, or Chinese, * for garnish, optional)
- mung bean sprouts (* for garnish, optional)
- limes (cut into wedges, for garnish, optional)
- jalapenos (stemmed and thinly sliced into rings, for garnish, optional)
