This spread is quite decent and similar to other recipes I have had.. I chose to not use garlic and also subbed the cayenne with Kashmiri Paprika since I like the flavor better and also like the spread to to have a zip.. White pepper is preferred, and definitely waaaay less mayo... just one heaping tablespoon will do.. If anything, a pinch of olive oil on the side.. I also added a bit of Horseradish Cheddar for a nice twang, and becuse the regular cheddar was a bit salty I did not need extra salt. Feel free to use pickled roasted bell instead of that tiny and expensive jar of pimentos.. or just get a jar of pickled cherry peppers.. since the other name of Cherry Pepper is Pimento...
