Description

- 4 boneless pork loin chops (1-inch thick)
- 1 Tbsp. canola oil (for pork chops)
- 1 tsp. salt (for pork chops)
- black pepper (to taste, for pork chops)
- 1 Tbsp. canola oil
- 1 white onion (large, chopped)
- 1 Tbsp. dried oregano
- 1 Tbsp. stone ground mustard
- 1 Tbsp. garlic (minced)
- 1/2 tsp. salt (for onions)
- black pepper (to taste, for onions)
- 3 Yukon Gold potatoes (medium)
- 1 can cream of mushroom soup (10.75 oz. per can)
- 1 1/4 cups milk
- 1/2 tsp. salt (for sauce)
- black pepper (to taste, for sauce)

Directions
- Preheat the oven to 350°F.
- Spray a 9x13-inch baking dish with nonstick cooking spray. Set aside.
- Season both sides of the pork chops with the salt and pepper. Heat a large skillet over medium-high heat. When pan is hot, add the canola oil and rotate skillet to evenly coat the bottom. Sear the pork chops for 1-2 minutes per side.
