I used oatmeal instead of rice and supplemented corn with chopped red and yellow peppers

Doubled the batch but didn’t double the corn, soo Good! Will definitely make again

Delicious! My kids wolfed them down. I must have made bigger fritters than Sasi because I only got 8 or 9 out of the mix, but I had already doubled the quantities, so we had enough for my tribe.

So good! I didn't have mint or ginger but still fantastic! I left the mix for 15 minutes and it was easier to form into fritters.
