  • 5 orange peppers (large)
  • 200 grams basmati rice (1 cup – washed and drained)
  • 1 Tbsp. olive oil (approx)
  • 1 medium onion (peeled and chopped)
  • 2 cloves garlic (crushed or chopped)
  • 1 courgette (small, zucchini chopped into very small cubes)
  • 60 grams mushrooms (chopped)
  • 4 sun dried tomatoes (large, chopped)
  • 3 Tbsp. sun dried tomato paste
  • salt
  • pepper
  • 2 tsp. sweet paprika (this is not the hot variety)
  • 460 mL boiling water (=2 x the volume of the rice)
  • 75 grams cheddar cheese (or alternative hard cheese, grated – Use a dairy free/vegan cheese as required or omit, if preferred.)
  • 30 grams pumpkin seeds (mixed, and pine nuts toasted for 10 minutes in hot oven)
