Description
Black beans, brown rice, spicy guacamole, and gooey cheese, all wrapped together in a crispy flour tortilla, make for an easy, crowd-pleasing dinner. Use leftover cooked brown rice or buy a package of pre-cooked. For a short-cut, you can buy 1 1/2 cups store-bought guacamole instead of making it from scratch. The recipe is a Yummly original created by Ericka Sanchez.

- 1 avocado (large)
- 1 jalapeño chili (small)
- 1 Roma tomato (small, finely chopped)
- 3 Tbsp. red onion (finely chopped)
- 2 Tbsp. fresh lime juice (plus lime wedges for serving)
- 1/2 tsp. garlic salt
- 1/4 tsp. black pepper
- 1 cup canned black beans (two-thirds of a 15-oz. can, rinsed and drained)
- 1 Tbsp. hot sauce (such as Tapatio or Crystal, plus more for serving)
- 1 cup cooked brown rice (use leftover rice or buy a package of pre-cooked)
- 4 flour tortillas (burrito-size, 10 inches wide)
- 1 cup shredded Mexican blend cheese (or Monterey Jack)
- 1 Tbsp. extra-virgin olive oil

Directions
- Cut avocado in half, remove pit, and scoop flesh into a medium bowl. Coarsely mash with a fork or pastry blender. Halve jalapeño lengthwise and remove seeds and membrane (or leave them in for a spicier guacamole); mince chili. Add jalapeño, tomato, onion, lime juice, garlic salt, and pepper to avocado and stir to combine. Set guacamole aside.
- Drain and rinse black beans. Pour into a microwave-safe bowl and stir in 1 Tbsp. hot sauce. Microwave until hot, stirring once, about 1 minute. Cover and set aside. Put brown rice in another microwave-safe bowl and microwave until hot, stirring once, about 1 minute. Cover and set aside.
- Heat a large nonstick frying pan (preferably 12 to 14 inches) over medium heat. Warm one tortilla at a time in frying pan, turning once, until warm and softened, 30-60 seconds total per tortilla. Transfer to a work surface, stacking them as you go.
