Description
This light and very easy stir-fry checks all the boxes for when you want to create a tasty, healthy dinner in a hurry, and it happens to be gluten-free as well. Keep the flavors simple, or feel free to experiment by adding minced fresh ginger, sliced green onions, toasted sesame seeds, and/or crushed red pepper flakes. The recipe, which makes 6 1/2 cups, is a Yummly original created by Edwina Clark, RDN.
Ingredients

- 8 oz. brown rice noodles (such as pad Thai)
- 4 cups broccoli florets
- 4 cloves garlic (divided)
- 1 lb. boneless skinless chicken breasts
- 2 Tbsp. vegetable oil
- 1/3 cup tamari (gluten-free, or use soy sauce)
- 1 Tbsp. toasted sesame oil (plus more to taste)

Directions
- Bring a covered pot of water to a boil and cook noodles according to package directions, then drain.
- Meanwhile, cut broccoli into bite-size pieces, if needed. Coarsely chop garlic. Cut chicken into pieces about 1/4 inch thick and 1 1/2 to 2 inches wide. Set aside.
- Pour vegetable oil into a large nonstick frying pan, set over medium-high heat, and heat until oil is shimmering. Add half the garlic and cook, stirring often, until it’s softened, about 1 minute.

Pretty bland. Should have definitely used more seasoning (ginger) and added peanuts and green onions.

Surprisingly very good for the short list of ingredients. If I had the time I would have added more veggies like carrots and maybe snap peas. I used low sodium soy sauce and plain sesame oil (not toasted) and it was delicious. Will definitely make again.

It was delicious! It was easy to make and very light I used brown rice instead of noodles and cauliflower instead of broccoli because that is what I had. The color was more bland but it tasted great!

We loved this! We substituted the noodles for udon noddles (not recommended) and everything was delicious! Easy to make and barely any clean up.
