This turned out really well, I didn't have leeks, so I used regular onions. I also cooked everything together then used my immersion blender to puree everything. I am going to be making this regularly.

Good with regular or fire roasted tomatoes, although I usually substitute regular onion for the leeks.. I make this regularly now.
