Description
This remake of tabbouleh salad with quinoa and three kinds of fresh herbs is absolutely delicious from the first bite to the last. You can make it with any color of quinoa, and add other finely chopped crisp vegetables such as radishes, cauliflower, or carrots. Serve the salad alongside your favorite grilled meat, and keep it in mind for picnics and potlucks. The recipe, which makes 7 cups, is a Yummly original created by Tina Ujlaki.

- 1/3 cup red onion (chopped)
- 1/4 cup sherry vinegar (or red wine vinegar)
- 2 1/2 tsp. kosher salt (divided)
- 1 cup quinoa (preferably multi-colored)
- 1 1/2 cups fresh flat-leaf parsley (leaves and tender stems, finely chopped)
- 1/2 cup fresh cilantro (finely chopped)
- 1/4 cup fresh mint (finely chopped)
- 1 Persian cucumber (large, cut into 1/4-inch dice)
- 1 cup cherry tomatoes (preferably small, or grape tomatoes, cut in half)
- 2 1/2 Tbsp. lemon juice (from 1 lemon)
- 2 Tbsp. extra-virgin olive oil
- 1/2 tsp. freshly ground black pepper

Directions
- Soak onion in the vinegar in a small bowl.
- Bring 6 cups water to a boil in a medium saucepan. Add 2 tsp. salt. Rinse quinoa in a fine strainer and add to boiling water. Cook until just tender, 18-20 minutes. Drain quinoa thoroughly in strainer, then pour quinoa out onto a kitchen towel set on a work surface and pat it dry. Let cool, 10-12 minutes.
- In a medium bowl, combine quinoa with parsley, cilantro, and mint, tossing well. Add cucumber, tomatoes, red onion and soaking vinegar, lemon juice, and olive oil to quinoa in bowl. Season with remaining 1/2 tsp. salt and the pepper and toss well. The couscous can be chilled up to 1 day.

A little too much water with the quinoa, but it’s ok
