Turned out great! Note: I use 3 c. of my rice cooker’s little measuring cup for the amount of rice in this recipe. Combos I use: (1) cucumber, peanut, avocado, (2) cucumber, julienned carrot, (3) spicy crab (separate Safari bookmarked recipe) w cucumber and and avocado. Sprinkle in some black sesame seeds. I also make some teriyaki and spicy sushi sauce for dipping, in addition to soy sauce/liquid aminos. Notes: cut the cucumber lengthwise and scrape out juicy seed section before thin slicing into little spears, chop up the peanuts in food processor. I don’t wrap my sushi mat in plastic wrap anymore as I keep the nori on the outside. Plus I use a sushi torpedo tool now (wet it and shake off excess water first). Wet fingers, wet knife when working with it. Also, I like to spritz my sushi w liquid aminos (soy sauce) and dip in a combo of sriracha and sweet & sour sauce. Serve w egg rolls or fried rice.

It was super yummy with a side of soy sauce. I substituted zucchini for the cucumber and they were a hit!
