Great first try for this recipe. Next time I think I will add more cottage cheese to add moisture and add honey for sweetness. I used strawberry whey protein powder, no cinnamon, and no dates. I also did not have a muffin pan so I baked it in a rectangle pan and cut it into squares.

I don’t know where I went wrong—the recipe is so easy!—But mine didn’t turn out well. They were undercooked in the center yet almost burned on the outside. Would’ve liked a tad more sweetness. I did use three large dates, but there was zero sweetness whatsoever. I definitely recommend silicone cups, it was very difficult to get the baked muffins out of the foil cups— what a mess.

Really great muffins. Easy prep. Can play around with the recipes. Only negative is the muffins have a shell-like crust. Inside is nice & soft though! Highly recommend.
