Authentic rye bread that I ate growing up in NYC! Didn't have potato flakes so I used AP flour with vital wheat gluten instead. When I run out of pickle juice I will sub 2 Tb apple cider vinegar for pickle juice. Thanks so much for sharing this recipe, it's a real keeper! Next time will add 1 Tb chopped dried onion and an extra 1 Tb water to add flavor variation. For the no knead version, made the following modifications: - remove oil , sugar and potato flakes. Used bread flour instead. - reduce salt to 1/2 tsp - reduce yeast to 1/4 tsp - kept everything else the same and baked in Dutch oven.
