BE SPARING WITH THE SZECHUAN PEPPERCORNS!!! They have a very pungent, bitter taste and can easily overpower this dish. I'd use a quarter of the recommended amount in this recipe. Also, I opted for a vegan version and used honalogo mushrooms instead of pork. The honalogo have a beefy smell and taste to them. Altogether--and aside from the overwhelming amount of peppercorns--this dish is delicious!
