2nd time - I roasted the cauliflwoer in a bunch of spices, then pureed it with 1/3 cup greek yogurt, 3 tsp of garlic puree, and a blend of herbs. This was really good!
1st time: Simple but good - I added 6 toasted garlic cloves and used cashew milk, topped with green onions. I'd throw in some goat cheese, too.... Used this recipe, too:

Added a bit of cheddar cheese and a half of a serrano chili pepper which made an amazing spicy cauliflower cheese dip.

Typically I read the reviews before making a new dish. This had So Many stars I just went for it. Not only was the garlic over powering but 1/3 cup of milk is Not realistic for a creamy texture. I think the Skinny recipe was deceiving. I used sugar free almond milk and added until creamy texture.

It was very yummly. I used coconut milk for a creamer texture. I didn't have a good processer so I used a blender. It didn't puree the cauliflower but it blended it enough to make it soft and creamy with small bits of cauliflower for texture. Will definitely make again

I think there was a spelling error. 2 tsp of garlic (1large clove or 2 medium ones) would be enough. I used my blender, and it worked well for me—just a bit difficult to get out. I’ll definitely try it again with less garlic.

Definitely too much garlic. Either reduce the garlic in half or add an extra head of cauliflower.
This recipe worked well for a family of 3.
For a creamier texture, add more almond milk.
EDIT: Made again today with double portions for left overs. Cutting the garlic in half makes this perfect.

this is a great recipe but i have to deduct a star for calling for a lethal dose of garlic. i used about 1 clove and that worked just fine!

it was super chunky! not at all love mashed potatoes. it tasted great but that's about it.

This will become a staple in our house, enjoyed by all ... including the 4yo, phew!!! Great replacement option for potatoes & grains. After reading the comments, we replaced the garlic w roasted garlic (not everyone loves garlic here either), a flavourful hit! Going to try a Pre roasting steam to play w texture next time.

The cauliflower part was good, the raw garlic in it made it not that enjoyable to eat. I would make it again however eliminate the garlic.

This was the first time I have ever made Cauliflower Mash and it was very simple. It was also very tasty. I am going to use this recipe often.
