Super easy weeknight meal. Cooking the chicken on the potatoes adds so much flavor. This is one of my favorites.

Was so good, super easy - I can see this as a great summer dish. I only had a cast iron but worked fine. Two things I would advise: 1. is to let the dish rest a bit, straight out of the oven the potatoes tasted bland, went back in 10 minutes for another taste and it was a great garlic and lemon flavor. 2. alot more than 30 minutes for baking if your roasting pan is thicker.

So good! Next time we should sear it outside on the grill. Very Smokey in the house! I will also squeeze lemon juice on everything too.

We have made this a lot but have added a number of things .we suggest firing off two onions and some mushrooms with some garlic first
We zest and juice two,lemons add some Italian herbs
We use our home Made chicken stock and just before serving add a touch of creme fraiche or cream and a little corn flower to thicken if required
This depends on what potatoes you use
The waxy potatoes you may need some corn flower while those that break up a little won’t require it

I made this for my partner and my brother, and they absolutely loved it. My partner reports that the crispy lemon slices are the best part. That said, he tried some both with and without the fresh cilantro and reported that he fresh cilantro really took an already good dish up to another level of delicious. I'm particularly pleased to have discovered this recipe because by my analysis it would also be Whole30 approved.

i didn't have oven so I just cooked it in the pan on medium high heat for 15mins and added a little bit of cajun, I turned out great! quick and easy. will be adding in my fave list

Easy recipe.. just make sure to have all your veggies pre cut before you start making the chicken.

Awesome! I had boneless skinless thighs, only had lemon juice, and used new potatoes. It turned out great! I’ll definitely be making it again.

It turned out okay but the potatoes were a little bitter which may have been my mistake since I used russets.

Loved it. The Dutch oven was a great idea. Two lemons was maybe one too many, but all else was so good. The cilantro is a great finishing touch

Easy and very tasty but prefer more seasoning for potatoes and more lemons used in the dish and juicing over top before baking

This was good, chicken was moist, I felt it needed a little extra time to completely cook the potatoes. At first I was going to rate it as a needing a bit more seasoning, but then realized I forgot to add cilantro to it at the end just def touch up the seasonings at the end

I used a dutch oven instead of a roaster pan and it turned out great.

Divine! We will make this again and again. Used a large cast iron skillet but otherwise followed the recipe. Yum!
