Was going to use 16 oz of cheese however while I was putting it into the crockpot, it just did NOT seem like enough cheese compared to the meat and tomatoes, so I added the whole 32 oz block and it was perfect

Awesome recipe, super easy. I diced up some onions and jalapeños to cook in the meat to give a bit more flavor and heat. Came out perfect.
