- 1 medium onion (peeled and chopped)
- 1/2 red pepper (seeds and ribs removed, chopped)
- 1/2 green pepper (seeds and ribs removed, chopped)
- 4 medium tomatoes (peeled, seeded, and chopped)
- 2 cloves minced garlic
- 1 Tbsp. tomato paste (Tbsp)
- 1 tsp. salt
- 2 sprigs fresh thyme (stems removed and chopped)
- 2 sprigs chopped parsley (fresh)
- 1 Tbsp. basil (Tbsp Cherchies®, Pizzazz Seasoning)
- 1 bay leaf
- 3/4 cup grated Parmesan cheese
- 2 sweet potatoes (small, washed, peeled and thinly sliced*, you can leave the skins on if prefer. Make sure to wash thoroughly.)
- 1 yellow squash (medium or 2 small, pick ones that are similar in size, washed and thinly sliced*)
- 1 zucchini (washed and thinly sliced*)
- 4 medium tomatoes (thinly sliced)
- 1 tsp. seasoning (tsp Cherchies® Garlic)
- 1/2 tsp. ground pepper

I didn’t have a circle pan, nor yellow squash. But other then that I made it my own kind of look and it was pretty simple and fantastic. You do, want to have patience while the veggies cook perfectly. Love me some good yummy veggies. This was a side dish to my main dish sausage omelet. Perfect.
