- 1/3 cup low sodium chicken broth (omit for the Instant Pot version)

- 2 cups spinach (and/or kale)
- cooking spray ([I use my EVO])
- 1/3 cup Parmesan cheese (blend – I love the shaved kind)

This was quick, easy and delicious! I used Italian Sausage since that’s what I had on hand so it wasn’t quite as healthy as this recipe but was very tasty. Next time I would cook up some potatoes to add to this to bulk it up and the hopefully have some for leftovers!

This is so delicious! It tastes healthy, clean but do not confuse that with not being super yummy. I could eat this everyday. I rarely cook spinach so I was a little nervous but the entire recipe was very easy. I probably added a little more Parmesan cheese - and then I hit broil at the very end to give a nice crispy layer on top. Definitely a recipe to repeat!

I used ground pork instead of turkey - can't use sausage because of salt content. Also low fat ricotta for same reason. This was surprisingly good! So thankful for this recipe!

I substituted fresh cauliflower for Trader Joe's frozen, and also fat free ricotta, however, it was still delicious!

Love it! So delicious and easy and something the whole family loved! This'll definitely be one of our family favorites that we have often!
