- nonstick cooking spray (as needed)
- 1 butternut squash (medium)
- 1/2 tsp. salt (for squash)
- 1/4 tsp. black pepper
- 1 cup heavy cream
- 1 clove garlic (minced)
- 3 sprigs fresh thyme leaves (stems discarded)
- 1 dash nutmeg (optional)
- 1 cup fresh white breadcrumbs (or panko)
- 1/4 cup grated Parmesan cheese
- 1/4 tsp. salt (for topping)
- 1/4 cup butter (melted)

Directions
- Preheat the oven to 400°F.
- Spray a 9x13-inch baking dish with nonstick cooking spray.
- Peel the butternut squash. Cut it in half lengthwise and remove the seeds. Slice each half crosswise into scant 1/4-inch slices.

posting based on look/smell alone, as this was prepared for Thanksgiving dinner later today. We used some vanilla extract in the heavy cream per some of the comments to give the squash a little more flavor.

I feel like it could use a little more flavor but other than that, it’s very good! I might add some vanilla to the heavy whipping cream next time

It was pretty good. Be prepared to use a lot more broth. I’m not vegan so we had it with cheese tortellini. WAs really good. I also added sautéed mushrooms and a couple large handful of spinach because that’s how I roll. Will definitely make it again.

You could make this low carb by
substituting coarsely ground toasted

This turned out so good, it tasted like Fettuccine Alfredo but with veggies! I made it with chicken breasts. My 10 year old loved it. I did cover with tinfoil while cooking.

yummy, but my bread crumbs browned a little more to my liking...added foil for last 5 min...will add aooner next time. could be my oven.
