Description
Blend a cheese-laced Dutch baby batter in a jiffy in the blender, then bake it in a hot skillet while you throw a quick salad together. There’s barely any chopping involved here, thanks to handy pre-washed baby arugula and jarred roasted peppers. Serve the Dutch baby with flaky hot-smoked salmon or trout to make it extra filling. Don’t have either? Toss a can of good-quality tuna with the salad. It’s a highly customizable dinner that hits the table in half an hour. The recipe is a Yummly original created by Sara Bir.
Ingredients
- 3/4 cup milk (whole milk or low-fat, preferably at room temperature)
- 3 large eggs (preferably at room temperature)
- 7 Tbsp. extra-virgin olive oil (divided)
- 1/2 cup flour
- 1/2 cup grated Parmesan cheese (finely grated, divided)
- 1/2 tsp. kosher salt (divided, plus more if you like)
- 5 oz. baby arugula (8 loosely packed cups)
- 1 roasted red peppers (store-bought, chopped)
- 2 tsp. red wine vinegar (plus 1 teaspoon, to taste)
- 1/4 tsp. black pepper
- 4 oz. smoked salmon (hot-smoked, or up to 8 ounces, but keep in mind it may be salty; or use trout)
- smoked paprika (optional, for serving)
Directions
- Preheat the oven to 450°F with a rack in the center. Set a 10-inch ovenproof skillet (cast-iron works best) in the oven to preheat at the same time.
- Combine milk, eggs, 1 tablespoon olive oil, the flour, ¼ cup Parmesan, and ¼ teaspoon salt in a blender. Blend on high speed until very smooth and the consistency of heavy cream, 1 minute. Set aside.
- Pour 3 tablespoons olive oil into the hot skillet and return it to the oven until the oil is rippling, 30-60 seconds.
