- 1 handful fresh mint leaves
- 1 Tbsp. chopped chives
- 1 Tbsp. minced shallot
- 1 tsp. whole grain mustard
- 1 tsp. honey
- 1/4 cup freshly squeezed lemon juice
- 1/4 cup extra virgin olive oil
- 2 Tbsp. fresh mint leaves (slivered)
- 1 pinch red pepper flakes

I was surprised by how good this was! I ate the whole thing in one sitting. I couldn’t find Armenian string cheese so subbed regular string cheese. This would be good as a slaw side or burger topper too.
