I made this in a smaller portion for two using chicken thighs; it turned our great. I added some yellow squash and served it over rice. Will definitely make it again.

I used a big chicken breast cut into large pieces and left out the roasted tomatoes. We had sausage & peppers with tomatoes the other day.
I used a gallon zip lock bag to toss and coat the peppers & onions first with seasoning then adding olive oil.
The dish turned out great! Definitely a cook again.

Awesome sheet pan dinner. Added some baby red potatoes, broccoli florets, and cherry tomatoes instead of the fire-roasted diced tomatoes. Delicious and hammy with the cherry tomatoes. Look forward to making this one again!
