Description
Creating this rib-sticking comfort food classic is a snap, thanks to rotisserie chicken, plus self-rising flour for the homemade sour cream-thyme dumplings. - 3 1/2 cups cooked shredded chicken (from 1 rotisserie chicken)
- 1 medium yellow onion
- 2 large carrots
- 1 stalk celery
- 1/2 cup salted butter (divided)
- 1/2 cup all-purpose flour
- 5 cups chicken broth
- 1 1/2 cups whole milk (divided)
- 1/2 tsp. black pepper (preferably freshly ground)
- 1/4 tsp. salt
- 1 bay leaf
- 3 sprigs fresh thyme (large)
- 1 3/4 cups self-rising flour (or use 1 3/4 cups all-purpose flour plus 2 tsp. baking powder, 3/4 tsp. salt, and 1/2 tsp. baking soda)
- 1/2 cup sour cream
- 1 Tbsp. fresh thyme leaves (plus more for serving)

Directions
- Skin chicken and tear meat into shreds if you haven’t already; set aside. Chop onion. Peel and slice carrots about 1/2 inch thick and slice celery about 1/4 inch thick.
- Melt 1/4 cup of the butter in a Dutch oven or other 5- to 6-qt. pot over medium-high heat. Add onion, carrots, and celery and cook, stirring often, until onion is tender, about 5 minutes.
- Add all-purpose flour to vegetables and stir to coat them evenly. Gradually add broth and 1 cup milk, stirring to combine. Add pepper, salt, bay leaf, and thyme sprigs. Bring soup to a simmer, stirring occasionally, 5-7 minutes. Meanwhile, make dumplings (see next step); if soup gets hot before batter is ready, reduce heat to maintain a simmer.
