    Very good! I chopped up some cucumber to include it in here as well. I used cilantro instead of parsley and I used butter lettuce and made lettuce tacos with it. Once I ran out of lettuce cups, I used tortilla chips and ate it like ceviche.

    turned out fantastic, fresh, on a 103 degree weather. the whole 2 pounds was gone in 1 dinner. easy to make thanks.
