Description
Traditional stuffed peppers made lighter with extra-lean ground beef and cauliflower rice. They're so flavorful, you'll never miss the added calories. The recipe is a Yummly original created by Sara Mellas.

- 4 bell peppers (large)
- 1/2 yellow onion (medium)
- 2 cloves garlic
- 1 Tbsp. extra-virgin olive oil
- 10 oz. ground beef (96% lean)
- 3/4 tsp. salt
- 1/4 tsp. black pepper
- 1 tsp. dried oregano
- 1 tsp. dried thyme
- 1 can petite diced tomatoes (14.5 oz. per can)
- 1 cup cauliflower rice
- 1/4 cup shredded reduced fat mozzarella cheese
- nonstick cooking spray

Directions
- Preheat the oven to 375°F.
- Slice the tops from the bell peppers, remove the stems, and set aside. Remove the internal seeds and membranes. Arrange the peppers open side up in a glass baking dish.
- Finely chop the onion and pepper tops. Mince the garlic.

These were absolutely delicious! I cut the peppers in half and filled them. I also used ground chicken instead of beef. So yummy! Definitely keeping this in my rotation!

Delicious, I put a sprinkle of salt inside the open peppers and microwaved in a microwave safe glass dish for 5 minutes to help speed the softening of the peppers & cut cooking time by 20 minutes.

the skinny peppers turn out very well, good flavor. i substituted ground turkey breast instead of ground beef.

Did not know what to make for dinner and this was exactly what I had in mind: not too many ingredients, not too complicated and delicious. Almost as my mom's 😄

De-lish!! So great, we’ve made it twice during quarantine! It’s become a favorite that the FamBam asks for! Turkey meat is healthier, and honestly it tastes better than ground beef. The only thing I do differently is while the oven is preheating, I get the bell peppers in the dish (water in the bottom of the dish) and in the oven while I’m diving everything up and cooking the meat. It makes the outer bell pepper softer and easier to eat. Otherwise, it’s still not 100% done if I follow the directions to a T. Bon appétit!!

It's better if you put the peppers in the oven already while making the meat and vegetables so that they get softer.

Good! Struggling a bit with the right amount of water for the dish, but it turned out fine. I also added cheese at the bottom of the peppers... deliciousness!
