  • 3/4 cup dried cherries
  • 3/4 cup kalamata olives (pitted)
  • 1/3 cup orange juice
  • 1 tsp. paprika
  • 1 tsp. crushed red pepper flakes
  • 4 sprigs fresh thyme
  • 1 cinnamon stick (3-inch piece)
  • 3 1/2 lb. chicken thighs (with the bone, skin removed, rinsed)
  • 1/4 tsp. salt
  • 1 Tbsp. ground cumin
  • 1/2 bunch cilantro leaves (roughly chopped, optional garnish)
  • 1/2 cup slivered almonds (*toasted, optional garnish)
