    So for my first attempt at a vegan Jambalaya, I'm pretty pleasantly surprised. For some reason, COVID-19 has made jackfruit incredibly scarce, so I added kidney beans and two bell peppers to break up the textures a bit. Unfortunately, without the jackfruit, it was missing a certain sweetness, so I added a small amount of Sweet Baby Ray's BBQ sauce to taste. A byproduct of this being the addition of a slight smokiness, which worked really well with the solid blend of spices that this recipe calls for. I'm excited to be able to try this with jackfruit in the future.
