- 1 lb. smoked turkey (shredded, leftover turkey from Whole Bird, Bone in Breast, or Basted Turkey Breast)
- 4 slices thick cut bacon (1/4-inch slices)
- 2 sweet potatoes (peeled and cut into 1/2-inch to 1-inch pieces)
- 1/2 cup yellow onions (1/4-inch dice)
- 1/2 cup red bell peppers (1/4-inch dice)
- 1/2 cup green bell peppers (1/4-inch dice_)
- 2 garlic cloves (fine mince)
- 1/2 cup dried cranberries
- 1 tsp. dried thyme
- kosher salt (to taste)
- black pepper (to taste)

Directions
- Peel sweet potatoes and cut into 1/2-inch to 1-inch cubes. Dice onions and peppers into a 1/4-inch dice.
- Heat a large sauté pan or skillet over medium high heat, add bacon. Cook for 5 minutes or until bacon begins to crisp.
- Add sweet potato, onions and peppers. Cook for approximately 10-15 minutes, making sure to constantly stir, until the onions slightly brown and sweet potatoes soften.
