I used fine ground corn flour, needed to add a little more milk and also added more sugar and nutmeg. Great flavors and delightful pancakes. These are the best Johnny Cakes. They are great for breakfast. Left overs can be eaten as a side dish maybe with ham and veggies.

These are incredible! I used just a bit extra nutmeg (grated fresh is so much better and really no need to measure accurately) and a little extra vanilla. Griddled on a Blackstone, which may be an unfair advantage, making for a perfect "fry" and delicious flavor. The texture is an exciting change from traditional pancakes and almost reminds me of a doughnut. Will put into rotation immediately!
