Fabulous! Fresh spaghetti squash from our garden roasted as directed and filled with yummy goodness. Substituted couple of things: poblano peppers, canned diced tomatoes with jalapeños and fresh corn kernels ‘cause these were on hand. Made a week ago and we’re ready for it again! Very good reheated next day served with Scoops tortilla chips for lunch.

Pretty good and healthy. Fairly easy to make although you need to allow time for the squash to roast in the oven and cool afterward.

Awesome! I will definitely make this again. My only modification was to substitute freshly grated Mozzarella & Parmesan for the Cheddar & add a chopped whole red pepper to the onions. My spices were as specified with a sub on the chili powder for Ancho Chili Powder. Great recipe!

It was very good. We put a dollop of sour cream on top of them. Also served them with tortilla chips.

I added a dollop of sour cream before serving. This added a creamy, sauce element that I thought it could use. Next time I make it, I’m going to add a can of Rotel tomatoes with green chilies to the mixture for an acid component.

I've made this over and over again! It's so delicious, even without the cheese. One of my favorites!

This is my new favorite meatless dish! I added some ground chipotle chili powder and it made the flavor pop. Absolutely delish.
