- 3 lb. boneless, skinless, chicken thighs
- 1 tsp. salt
- 1/4 tsp. cayenne pepper
- 1 cup bbq sauce (your favorite i used sweet baby rays original)
- 3 Tbsp. bourbon
- 1 Tbsp. apple cider vinegar
- 1 tsp. jalapeno (ground, dried, if not available, use fresh jalapeno and mince, i would use 1 large seeded jalapeno in this case)
- 5 slices smoked bacon (hickory, cut into pieces, this was fairly thick bacon)
- 2 Tbsp. paprika (sweet mild, can use a hot paprika if desired)
- 1 Tbsp. smoked paprika
- 1/2 tsp. chili powder (can use hot if desired)
- 2 Tbsp. brown sugar
- 1 tsp. garlic (minced)
- 1 Tbsp. olive oil (extra virgin)
- 1 tsp. salt
- 1/2 tsp. pepper
