- 3 Tbsp. extra virgin olive oil
- 1 yellow onion (large, diced)
- 3 cloves garlic (chopped)
- 4 stalks celery (diced)
- 1 Tbsp. jalapeño (diced, use more or less depending on how spicy you like things – 1 Tbsp. gives it a nice kick)
- 4 cups fresh tomatoes (diced, you could also use whole cherry tomatoes or one large can of crushed tomatoes)
- 2 cups brown rice (uncooked)
- 4 1/2 cups vegetable stock
- 2 tsp. vegan Worcestershire sauce (you can find some good vegan varieties online or, if you don’t have any of the vegan stuff handy, just leave it out!)
- 3 bay leaves
- 1 tsp. smoked paprika
- 2 tsp. hot sauce (I use Sriracha)
- salt
- pepper
- 1 1/2 cups chopped cilantro (plus extra for garnish)

My store ran out of bay leaves and cilantro ironically so I cut back on the stock a bit, threw in a bit of green onion, my special seasonings, and some vegan sausage. Smelled so tasty had to throw in some Cajun seasoned shrimp as well (Pesco-vegetarian). Definitely a hit!

Sooooo delicious!! I added in spicy Italian tofurky sausage... it took the dish to a whole different level :) my parents (who aren’t vegan, but I’m trying so hard to open their hearts to it) stole half the leftovers to take home, since I doubled it. This is definitely a must try!!

i wouldnt say super spicy but it was flavorful i added more pepers and ghoast pepper extract to give it my personal spice level

This was easy to make and very filling. The perfect dish for a cold rainy day. I didn’t have brown rice so I used white rice and it turned out just fine ☺️

The very first one-pot rice dish that actually worked for me! I used parboiled brown rice and cooked it for 20mins on a medium-low simmer, let it rest for 5mins, and it came out perfectly. Definitely a fan!

My family and I really enjoyed this recipe. I enjoyed the spices and like that the brown rice was cooked throughly. Brown rice in dishes can be unpredictable, but this rice was just right
