I absolutely loved this recipe. I have made it twice now! Both times I used the microwave bags of quinoa. After microwaving I added a small amount of chicken stock to a pan before adding the quinoa in to soak up the stock and then the other ingredients. Would highly recommend.

Seriously flavourful and good! I used chicken broth to make the quinoa. Next time I'll try omitting the added salt because between the pesto, chicken stock and parm it was salty. Might try adding chicken next time too. Very good! Highly recommend.

I was really impressed with how well this recipe turned out. It was creamier than expected and had nice flavor. I added chicken. Would suggest maybe only 4 or 5 cups of spinach. I also think adding some fresh basil would be great. Definitely made a lot of leftovers as well.

I absolutely love this meal!! I've made it a few times since discovering it, and it's delicious every time. A really great one to make for "meal prepping" because it reheats very well. I used a bit less spinach just because it got to be a bit much for me, but for those who love spinach use the amount they recommend!

I reduced the recipe and used one cup of quinoa and 3 cups of spinach. I will definitely make this again.

You can definitely tell that it is healthy by the taste.
