Because there are so many vegetables, it needs to sauté pans instead of one. It may also need two large 8x11 pans or one deep 9x13 pan to bake it in as well to accommodate the egg mixture and veggies.

It was so excellent that for the 1st time in 20 years my family asked for a 2nd serving of their vegetables. This is a winner for even the pickiest eater

turned out great! I did add a few herbs and left out the sugar peas.

I added mushrooms, onions, tomato, spinach, broccoli, and cheese. Then made "egg cups" using muffin tins. Pretty easy to prep and make. Tastes great!

It's tasty, but the eggs are too dense and not fluffy. I plan to make it with ah 1/3 less eggs next time.
